There is quite a bit of overlap between all the casting classes, so I have just compiled all enchants that I considered relevant for casters. All casting enchants for each slot viable for casters is listed, however, the list is listed from best to worst based on the following stat weighting:
Intellect>Haste>Spirit>Critical Strike=Mastery
Adjustments should be made to take into account hit cap and mana regeneration, as well as any class specific weighting for mastery. “Leveling” enchants were excluded.

*Lavawalker can replace haste or be replaced with mastery depending on how strongly you feel about the ability to run real fast during raid encounters.
